June 28, 2011


It was breakfast, lunch and dinner kind of night on the Buckburger this week. We have a sausage patty, biscuit and sausage gravy for breakfast, a Caesar salad for lunch and a bacon and swiss burger for dinner. The patty was pan seared and then we made a nice beurre rouge to top the whole thing. There are also Buck's beloved micro greens....for health reasons.

This week's Buckburger is a little surf and turf action. It is not the biggest one we have ever made but I am told it was delicious. It has field greens, lemon-dill aioli, the patty, bacon, swiss, a salmon cake, a fried egg, more lemon-dill aioli,  grilled shrimp, micro greens and tomato.

This weeks Buckburger contained two 1/3 pound patties sandwiched around a 1/3 patty melt on our homemade beer & gouda bread. Each patty has cheese and bacon. The whole thing was topped micro greens, tomato & mayo. I am told that this one almost killed Buck. Almost.

This was our 25th documented Buckburger! That is almost half a year of these things and going strong. This week we reached another milestone in that, due to scheduling reasons, my partner John and our main saute guy Pat were working instead of me and Brad. That makes so that each cook at the Bandwagon has been involved in the creation of at least one Buckburger. This one has a tuna steak, a real steak, bacon, a deep fried egg, sesame-peanut slaw, micro greens, bacon, swiss, lettuce, onion, cheddar & sesame-peanut sauce.

may 31, 2011



The Buckburger was a protein nightmare this week. First of all, we made a 3/4 lb patty this week. We set that up on top of roasted duck breast & grilled shrimp. We put a little orange ginger sauce in there. We topped the patty with four pieces of fried pepper jack, melted some cheddar and swiss on top of that and topped it all with homemade bacon. Then we put on some of Buck's beloved micro greens and some BWB BBQ sauce.  Bam!
